Spicy Peanut Ramen Hack

Everyone has their go-to for how to hack their cheap ramen noodles. This is one of my favorite ways to do so and it doesn't break the bank!

Ingredients
2 packs of your ramen of choice
8 oz protein of choice (i used ground pork)
3 Green Onions
Shredded Carrots
2 Cups Cabbage mix or shredded cabbage
2 garlic cloves minced or grated
2 tbsp peanut butter of choice
1 tsp Sesame Oil
2 tbsp of honey sesame stir fry sauce (or choice of stir fry sauce)
1 tbsp soy sauce
1 Packet of spicy ramen sauce (this comes with the ramen I choose, but you can sub sriracha or another spicy hot sauce)
Preparation
Prep Ingredients: slice green onions separating whites and greens, mince or grate garlic.
Make Sauce: In a small bowl, combine Buldok Spicy Ramen pack (or sriracha), Rice Wine Vinegar, peanut butter, stir fry sauce, 1/2 of your garlic, sesame oil, soy sauce, and a pinch of sugar. Mix until thoroughly combined and everything is dissolved. I also add a bit of water to help this process along. Don't worry if you add too much, it can always cook down.
Make noodles: In a large pot, boil water. Once boiling cook ramen noodles until finished. drain and rinse under cold water and set aside. You'll use these later.
Cook Veggies: Pre-heat a large tall sided pan or wok on medium heat. Once preheated add a drizzle of oil. Add your cabbage and carrots as well as the green onion whites. Cook until slightly charred and softened. Add in remaining garlic. Season with salt and pepper. Once fragrant and veggies are nice and softened, remove from pan and set aside.
Cook Protein: In the same pan used as the veggies, drizzle oil and add your protein. Once browned and cooked throughout, add your sauce and cook until thickened.
Combine: in the pan with the protein and sauce, add in the veggies and ramen noodles. Stir until combined.
Garnish and Serve: In ramen bowls or tall sided bowls, add your stir fry to the bowl. Top with the remaining dried veggie packet from the ramen, sesame seeds, green onion, and hot sauce if desired.
Tips and Best Practices
Use whatever protein you like. I find that this works well with pork and tofu. However, you could do whatever suits you best. Spam is pretty good in this as well.
Taste your sauce before cooking. You may like it spicier or more mild. If you use the Buldok sauce, BE CAREFUL. It is very spicy and if you use too much it may be overwhelming. I love spice and I use one full pack of it (from the two available since i'm making this for two) and it comes out pretty spicy.
Sub out whatever veggies you have! I usually have cabbage and carrots on hand but you can use others if you have them.
