15 Minute Chipotle Chicken Bowl

Ingredients:
1/2 Cup Rice
6-8oz pre cooked chipotle chicken
6-8oz beans of choice drained and rinsed
1/8 cup chihuahua cheese or Mexican cheese
1 tbsp tomato paste
2 tbsp lime juice
2 tbsp chopped cilantro
Quarter cup of your favorite salsa
3 tbsp sour cream
2 small packages of guacamole (optional)
Instructions:
Cook rice in a small pot or rice cooker according to instructions on package. Once cooked, add half your cilantro and half your lime juice. Season with salt and pepper to taste.
In a pan on medium heat, heat a drizzle of oil and add your chicken and beans until warmed. Optional, but I recommend adding a tbsp of tomato paste and some additional spices (chili powder, cumin, paprika) to add extra flavor and sauciness. Thin tomato paste with water in the pan until it’s a sauce consistency. Heat on a low simmer until ready to serve.
In a small bowl combine sour cream and lime juice to taste. If you want it spicier, add chili powder and smoked paprika. Thin with water until a drizzle consistency.
• ⁃ To your serving bowls, add rice, chicken and beans, salsa, sour cream mixture, cheese, and guacamole. Garnish with cilantro and hot sauce of choice.
