Crispy Broccoli and Salmon Rice Bowl

When I'm feeling lazy, this is a go-to. There's not a lot of prep that goes into it and most of it is just waiting on it in the oven.
Ingredients
½ Cup of Uncooked Rice (Short Grain Preferred)
1 Head of Broccoli
2 Salmon Fillets
1 TBSP Bang-Bang Seasoning
2 TBSP Mayo
1 TBSP Sriracha
1/2 Avocado
1-2 TBSP Stir Fry Sauce I use a Honey Sesame
Sesame Seeds for Garnish (Optional)
Green Onion for Garnish (Optional)
Preparation
Wash and Cook Rice: Wash rice under water until it runs clear. Cook rice according to the package using a stove or rice cooker.
Prep Ingredients: Preheat Oven to 425. Chop broccoli into bite size pieces. Season. your salmon fillets all over. On baking trays place your broccoli on one and salmon on another. Season broccoli with salt and pepper and the seasoning if desired. Drizzle oil and mix well ensuring all pieces are seasoned.
Cook Broccoli and Salmon: Place your broccoli in the oven for about 25 minutes or until crispy. Once the broccoli has roasted for about 10 minutes, put your salmon into the oven. Once your salmon has cooked about 12-15 minutes, rub glaze over the top and bake for another 5-10 minutes or until cooked to temp.
Make Sauce: Mix Mayo and Sriracha into a small bowl and season with salt and pepper. Incorporate a small amount of water and mix until the sauce is drizzling consistency.
Plate and Serve: Add your rice, broccoli, and salmon to the plate. Top with sliced avocado, spicy mayo, and sesame seeds!
