If you want a meal that you can just throw into the oven and get some other things done after a long day, here's your recipe. It's full of flavor, nutrition, and it's not going to be a ton of effort.

Ingredients

  • ½ Cup of Uncooked Rice (Short Grain Preferred)

  • 2 boneless skinless chicken thighs

  • 1 head of cauliflower

  • 2 TBSP curry powder

  • 1 chili pepper (optional)

  • Cilantro for garnish (optional)

Preparation

  1. Wash and Cook Rice: Wash rice under water until it runs clear. Cook rice according to the package using a stove or rice cooker. One thing I like to do if you want a bit more flavor in the rice is to add a bit of turmeric and chicken bullion or stock to the water.

  2. Prep ingredients. Preheat oven to 400. Chop up the cauliflower into bite size pieces.

  3. Bake Chicken/Cauliflower: Bake in the 400 degree oven for 30 minutes. Once 30 minutes has elapsed, take out the chicken, heat the oven to 425 and allow cauliflower to crisp up before pulling back out, about another 5-10 minutes.

  4. Plate and Serve: Plate your chicken, rice, and cauliflower. If desired, add minced chili. I add this black garlic peri peri hot sauce that goes perfectly with it.
